What I had last night, which turned out to be a nice, simple meal, which is probably good for me as well.
Soak some fueru wakame (dried seaweed -- only takes about 5-10 minutes to be ready). Boil rice. While the rice boils, squeeze the seaweed and add rice vinegar, soy sauce, sesame oil and chilli powder, mix well and leave to sit until the rice is ready. Add the cooked rice, mix well, eat. A cup of strong green tea goes really well with this.

My latest acquisition is a shaker of wasabi furikake - basically seaweed with spices for putting on rice - and I need to cook something which will leave me with enough leftover rice to try it. Somehow, I think it won't go on the leftover Mexican rice that's sitting in a pan right now.
One canister of furikake, any flavor (easily findable in Boston/Cambridge, since I can think of half a dozen Japanese/panAsian supermarkets).
Rice.
Water.
Put rice and water in rice cooker. When it stops, scoop some onto a plate and add furikake. Eat.
